Wookiee Hut Cuisine presents: Vaguely Neimodian / Chinese Stuffed Peppers by Susu On board the Neimoidian freighter, meals were created by droids programmed with recipes that were long on luxury and expensive ingredients. Flavor was secondary, in that the Neimoidians were quite conservative, favoring flavors from their home planet. On earth, we'd say their cuisine is vaguely Chinese in taste. The bookkeeper on the freighter, however, was charged to watch the bottom line. So he surreptitiously programmed the droids to work with leftovers. It saved an amazing amount of money! And what's more, some of the recipes were tastier than the luxurious original dishes. This was one of them. Not realizing the economical nature of this dish, Viceroy Nute Gunray even asked for thirds! 4 peppers, halved, trimmed, seeded, cleaned (we like yellow or red, but any color is fine) 1 ½ cups chinese long grain rice, cooked and chilled 1 cup of cooked greens, chopped (watercress or bok choy is good, and so is celery, etc.) 2 medium sized tomatoes, chopped 1 to 2 cups poultry, chopped (mixture of duck, chicken, turkey, dark meat, etc. is great) about ½ cup Chinese or Hungarian or Italian sausage, chopped into medium-find dice (hard sausage is better here) 1 x 10 oz. can condensed cream of mushroom or cream of chicken soup 2 slices of stale bread, cubed 8 slices of cheese (muenster was used in this dish), or ½ cup grated cheese Place peppers in a microwave safe platter or baking dish, cover with plastic wrap, poking holes for ventilation, and cook on high power for 4 minutes. In a microwave safe bowl, mix together the remaining ingredients except the cheese, cover with plastic wrap and cook on high for 5 minutes. Spoon the stuffing mixture into the pepper halves, pepper side down. Cover with plastic wrap, poking with vent holes, and microwave on high for 5 minutes. Sprinkle with cheese and microwave for another minute. Let sit for a few minutes before serving. Feeds 4 to 8.
