 Serenity Brews

After living on the interplanetary cargo vessel, Serenity, for a while and traveling the black (as outer space is called), new passengers and crew often developed cravings they were desperate to answer when they finally hit land. Often, a "good fresh cup of coffee or tea" was high on the list of things the people wanted, complete with real, fresh, whole milk. But after the first few mugs of the hot or cold beverages, they found that fresh milk just didn't have the "body" and sweetness of the canned products, and they found themselves craving the on-ship version of coffee and tea! But rather than admit it, some crew members took to keeping the formula in their heads so they could make these brews — served hot or iced — in private. You would too, if you complained about it before you found out how good it really was!
    Serenity Coffee
  • ½ to 2/3 cup instant coffee powder
  • 3 cups warm water, or to taste
  • 12 oz / 335 g can evaporated milk (about 1 cup)
  • 14 oz / 400 g can sweetened condensed milk (about 1 cup)
In a bowl or pitcher, dissolve the powdered coffee into the warm water. Add the evaporated milk and condensed milk. Mix well. Depending how strong you like your coffee, adjust the amount of water you use. Serve over ice. Yields 6 to 7 cups.

If you prefer to have this rich brew how, start with boiling water in a saucepan, and dump in the instant coffee and the canned milks, and heat over medium heat, with stirring, till it's all mixed together. Ladle out carefully into mugs.

    Serenity Tea
  • ½ cup powdered instant tea or tea leaves
  • 5 cups boiling water, or to taste
  • 5 oz / 170 g can evaporated milk (½ cup)
  • 14 oz / 400 g can sweetened condensed milk (1 cup)
If you are using real tea leaves, in a big teapot or lidded saucepan, steep the tea leaves in the boiling water — the water must be boiling hot! Steep for 5 minutes. Alternatively, put the tea leaves in the brewbasket of a coffeemaker and make your tea that way. Or put the powdered tea into the warm or hot water. Pour in the evaporated and condensed milks and mix thoroughly. Depending how strong you like your tea, adjust the amount of water you use. Serve over ice. Yields 6 to 7 cups.
